Fatima's lentils (that MoBob and I fought over for the last spoonfuls)

And he was somewhat mortified to find out about the canned tomatoes, but what the heck.

2 onions, chopped
2 cloves garlic, minced
6 cups water
1 cup red lentils
1 (14.5 ounce) can diced tomatoes
1/2 teaspoon ground cumin
1 tablespoon olive
salt and pepper

In large pot saute; the onions, salt , pepper and garlic, in a little olive oil for about 5 minutes.
Add the water, lentils, diced tomatoes,and cumin. Bring to a boil for a 5 minutes then simmer for 45 mn to 1 hour , until the lentils are soft.

Actually I think that's why - Moroccans use pressure cookers extensively but we don't have one.

I'm going to have to try these. When I worked at my last school, some of the Turkish teachers would have me over for dinner, and their lentils were always so tasty but I never knew what they did to them.

Do you think this recipe lends itself to having meat added, out of curiosity? I would think chicken could be good (the way arroz con pollo tastes...)

Actually, I don't know - but it's a forgiving recipe so I'm sure chicken would work!
